Apple Cookies are one of my favorite cookies since I was a kid! Every single bite bring me back to my childhood in Italy. Its a buttery soft cookie dough stuffed with cooked Apple and sprinkle with cinnamon!

My mom wasn’t a baker so she used to buy them all the time and I used to finish the box in no time! Back then they were very popular and really good, on my last trip to Italy unfortunately I was disappointed after I bought a box! The flavor changed a lot, way less apples and more sugar! I actually said to myself , after I took a bite, that My homemade Apple cookies are way better than that!

Every year I make them for Christmas, they are now my family favorite! I would love to make them more often but they are so dangerous…..I can’t stop eating them!

P.S. I always double the recipe, they stay few days in a box and good in freezer.

Ingredients

For the cookies dough (make 20)

  • 100 grams butter room temperature
  • 80 grams sugar
  • 1 egg
  • 220 grams flour
  • Half teaspoon of baking powder
  • 1 teaspoon of vanilla
  • A sprinkle of love

For the filling:

  • 2 medium apple
  • 1 tablespoons of honey
  • Half teaspoon cinnamon
  • 20 grams of butter

Method:

In a bowl mix the flour, baking powder, vanilla, eggs, sugar and butter cut in pieces!

Mix with your hands until the dough is nice and soft! Cover it with plastic wrap and let it rest for at least 1 hour in the fridge!

Cut the apples in small pieces, in a frying pan put the 20 grams of butter, let it melt and add the apples! Add now the honey and the cinnamon! Cook for 10/15 minutes until the apple are soft! With a fork mash the apple a little bit if you like! I like to find piece of apple when I bite the cookies so I don’t over mashed them. Your house now will smell divine, apple and cinnamon are a great combination.

Let the apples cool down! Get the dough from the fridge and roll it out!

The dough is very sticky so what I usually do is to put a piece of cling wrap and roll! Also on your wood board you can do the same or put lots of flour! When you roll out the dough with a round cookie dough cut your cookies! I use one that is almost 2 inch wide!

When you cut out all the cookies put sone apple filling in the middle of your cookie and put another piece on top, using your finger tip try to close the cookie! Its more easy to do than to explain it!

Put the cookies on a baking sheet covered with parchment paper and baked them at 350 for 15 minutes until they are slightly colored.

When they are still hot sprinkle them with icing sugar and more love.
