I’m so happy to present you Mamma Marzia wheel o I’m so happy to present you Mamma Marzia wheel of cheese Bitto Storico Ribelle an extraordinary cheese from Valgerola ❤️
My husband bought it last summer for my 50th Birthday.
It will stay at the cheese factory for few years until we will decide to bring it to’ Canada, maybe 🤣
Here a bit of history of Storico Ribelle cheese

The Storico Ribelle is a raw milk Alpine cheese, produced in certain mountain pastures in the Orobie Pre-Alps. When ripe, it comes in regular cylindrical shapes with a diameter of 40-50 cm, a height of 9-12 cm and a weight that varies from 9 to 20 kg. The paste, compact, of variable color from white to straw yellow depending on the seasoning, has rare holes like a partridge's eye.
The production phases take place according to traditional uses, linked to the environmental characteristics, in the period between June 1st and September 30th.

The freshly milked cow's milk is added to the goat's milk (10-20%), obtained from the Orobica breed (native breed at risk of extinction) and worked raw, on site, in the "calècc".

Raw milk has variable microbiological characteristics depending on the climate, the environment in which the animals live and their nutrition: the production specification of the Historian does not allow the use of lactic ferments during the cheese-making process, nor to supplement the feed of the cattle and goats with feed and silage to keep the properties of mountain milk intact.

The prohibition of the use of lactic ferments (starter) in the curd, imposed by the disciplinary of the Historic Rebel, enriches the organoleptic variability of the cheese, made exclusively thanks to the local bacterial flora which differs according to the mountain pastures (surfaces, tools, wet or dry areas) . The high aromatic variability and unpredictability puts the product at risk of developing defects.

For this reason, the production of Storico Ribelle is selected in the Gerola Alta maturing Casèra, to obtain recognition as a Slow Food Presidium.

Giuseppe won the Pizza Competition yesterday and this is the pizza that he made. It was absolutely perfect and delicious.
Description:

Pizza name: Nostalgia.
It is a unique and personal revisitation of a classic favorite from my childhood (the "Prosciutto e Rucola").

The dough is made using a combination of Biga and autolysis.
The Biga is prepared with strong typo 0 flour from "5Stagioni," while the autolysis consists of 00 flour, semi-strong flour, and 10% local whole grain flour from Cedar Isle Farm in Agassiz, BC.
The final hydration is 78%, and all the flours used are organic.

As for the toppings, there is a layer of 30-month aged parmesan cream and tomato confit (made in two different ways: one sweet and one with a Spanish DOP sherry vinegar Reserva 7% acidity) along with fresh cherry tomatoes before baking.
This combination creates three different tomato-tasting experiences.

Once out of the oven, the pizza is topped with stracciatella cheese, arugula pesto made with sunflower seeds, and drizzled with Cutrera extra virgin olive oil from Monti Iblei in Sicily. I chose Cutrera oil for its scents of green tomatoes.
Finally, it's finished with a sprinkle of Maldon salt and served with 30-month aged prosciutto di Parma on the side.

Spaghetti aglio, olio e peperoncino 🌶️ Spagh Spaghetti aglio, olio e peperoncino 🌶️ 
Spaghetti with garlic, oil and chilli flakes 🤣
This is one of the only recipe where I don’t take out the garlic 🧄🤣🤣🤣
Simple dish to make under 10 minutes.

Ingredients for 2 people:

150 g spaghetti 
2 cloves garlic,without the soul
4 tbsp extra virgin, good quality 
Chili flakes 
Salt and pepper
Parmigiano Reggiano
Parsley 
A sprinkle of love

Method:
Fill up a big pot with water and bring it to a boil
When it boils add the spaghetti. Check the time on the package and put a timer on. Add salt to the pasta.
When the pasta is almost ready in a big skillet pour the oil and add the garlic chopped and the chilli flakes.
Stir fry for few minutes and add the cooked pasta.
Incorporate all the ingredients.
Add a sprinkle of love, parsley if yku have it, parmigiano and black pepper.
Enjoy it.

In honour of Mother Day I want to share this recipe that I filmed with my mom last summer. I think she is the best cook ever and Im so grateful that I learned so many things from her and also I have the same passion for cooking.

List ingredients below, for the amount “a occhio” / By eye” like my mom say in the video. This mean as much you think u need 🤣

Ingredients 
Rice 
Oil
Hot-dog
Boiled eggs
Peas
Tomatoes 
Mozzarella
Parmigiano Reggiano shaved
Pickles
Italian Ham
Lemon juice
Salt and pepper

Method:
Cook the rice and add all the ingredients. Let the salad sit in fridge few hours before serve it.

This is our favourite recipe for Chocolate chip cookies.
Recipe is from @bettycrocker website, simply the best. 
I just add a bit less sugar and I use 2 type of chocolate chip, dark and white. 

Ingredients for 50 cookies:
1 cup of sugar
3/4 cup brown sugar
1 and half cup of butter softened 
2 tsp vanilla
3 eggs room temperature 
4 plus 1/4 cup flour 
2 tsp baking soda
1/2 tsp salt
2 cup chocolate chip
A sprinkle of love

Method:
Pre heat oven 375F
In a bowl mix the dry ingredients.
In a bowl mix butter and sugar until it has a good consistency. Add vanilla and the eggs one at the time making sure to incorporate it fully to the cookies batter before adding the next one.
Add the dry ingredients and mix.
Add the chocolate chips and mix. 
With a spoon grab some dough and drop it on baking sheet covered with parchment paper. 
Bake for 8/10 minutes until it has gold colour.
After few minutes add the cookies on a rack❤️

I have few but number one is definitely lasagna.
I still remember the smell of Meat sauce coming in my bedroom early Sunday Morning. 
That smell was the best alarm clock.
I still remember helping my mom making the lasagna. My favourite was stirring the Beschamel sauce and cleaning the pan after, of course ❤️

Ingredients:

❤️500 g flour 
❤️250 ml lukewarm water
❤️ 10 g active dry Yeast 
❤️ 1/4 tsp sugar
❤️ 1 tbsp oil evo
❤️ 1/2 tbsp salt
❤️ A sprinkle of love 
❤️ 500 ml Tomato Sauce
❤️ 1 and half liter sunflower oil to fry
❤️Mozzarella 
❤️Basil, if you have it
